Mission Statement
The Department of Nutrition and Herbal Medicine is committed
to the pursuit of knowledge, stimulation of debate, promotion
of research, and the education of students in the arena
of nutrition and herbal medicine. In recognition of the
growing interest in defining the relationship between herbs
and health, emphasis is placed on the role of nutrition
and herbs in such issues as chronic disease, modification
of nutritional components, development of functional and
alternative foods, dietary modification, sensory analysis,
natural resources, and those areas, issues, and concerns
that relate to human health, performance, and a sustainable
environment.
Objective
This program offers basic, fundamentally intensive and
comprehensive training in nutrition and herbal medicine.
The disciplines learned in this course of study carefully
develop the nutritional knowledge necessary to enable the
student to understand and combine the various functions
and properties of herbs and vitamins in order to establish
formulas for the proper usage of all elements.
The knowledge gained from this program will prepare the
student for employment as a nutritionist or herbalist. These
general education requirements provide students with a well-rounded
educational background in the role of nutrition in general
and herbology in particular.
An overall comprehensive understanding of the health maintenance
system is the goal of these programs.
The disciplines learned in nutrition and herbal Medicine
courses of study carefully develop the nutritional knowledge
necessary to enable the student to understand nutritional
facts of foods and combine the various functions and properties
of herbs, vitamins and mineral in order to establish formulas
for the proper usage of all elements.
